As promised, here is the recipe for the best meatballs I’ve ever had. These are perfect for crochet and knit get-togethers, not to mention the upcoming Super Bowl (Go whichever team wins me money!) The recipe was handed down to me by my cousin, who in turn got it from our Great-grandma Internet.
Cranberry Cocktail Meatballs – by Diana Rettray
Meatball Ingredients:
· 2 pounds ground beef
· 1 cup corn flake crumbs
· 2 eggs
· 1/4 cup chopped, fresh parsley
· 1/3 cup ketchup
· 1/4 cup minced onions
· 2 tablespoons soy sauce
· 1/4 teaspoon garlic powder
· 1/4 teaspoon pepper
Sauce Ingredients:
· 1 can (16 ounces) cranberry sauce, jellied or whole cranberry sauce
· 12 ounces chili sauce (see Note)
· 1 tablespoon brown sugar, firmly packed
· 2 teaspoons lemon juice
Note: I highly recommend Kikkoman Thai Style Chili Sauce. I used a 9oz. bottle instead of the instructed 12oz. and it worked out great.
Preparation:
In a large bowl, combine ground beef, corn flake crumbs, parsley, eggs, ketchup, onion, soy sauce, garlic powder and pepper. Blend ingredients well and form into small balls, about 3/4-inch in diameter. Place in an uncovered casserole or baking pan. Heat oven to 300°.
While meatballs are cooking (see Another Note), combine cranberry sauce, chili sauce, brown sugar, and lemon juice in a saucepan. Cook, stirring, over medium heat until mixture is blended. Pour hot sauce over meatballs in casserole. Bake for about 45 minutes, depending on the size of the meatballs. Transfer to Crockpot and keep on LOW for serving.
Makes 4 to 5 dozen meatballs, depending on size.
Another Note: Since I was rushing for the Drew’s arrival, I kind of misread this part and didn’t precook the meatballs but put the meatballs and the sauce together in a casserole and baked for 50 minutes. This produced a moist and juicy meatball and very nom-nom.

The pattern can be found as part of the Flying Spaghetti Monster pattern at History Weaver. It is not recommended that you put the knit meatball in the oven or slow cooker. I suppose you could cover it in sauce and suck on it in an emergency.
